The earliest clearly documented use of egg white for clarifying liquids appears in early modern Europe, during 16th–17th century , mainly for food and drink (broths, wines), not water. Egg white is used because its proteins coagulate when it is heated. The coagulated proteins trap impurities. The goal is clarity and refinement , not sanitation There are scientific references showing that egg white (or egg-white proteins) can serve as a coagulant to remove suspended particles from water or wastewater systems ,but these studies focus on a modified egg white or use it in combination with polymers not raw egg white alone.
